It's been a while since I've had a standard car. I remember how to shift without the clutch, but is it safe for the 6MT trans? Will I do any damage to any component If done without grinding? What do you guys think?

The 6MT is not much different than any other car. But do note that done wrong, it can wear your syncros prematurely. There is very little benefit to clutchless shifting. Clutch wear is minimal during normal shifting and trying to shift fast without a clutch will either result in grinding or you simply won't be able to shift faster than using the clutch.
