there are two camps. Nikon and Canon all others dont really matter (sony, pentax, olympus) Personally, it depends on what you want to do. Do you want a fantastic camera but arent interested in upgrading the lens and such? If so, go with the Nikon D40. Thats what i have. The problem is that it doesnt have "inbody" autofocus. all the autofocus is done in the lens. as a result, it can only autofocus newer lenses. Alot of people have older nikon lenses which have to be manually focused on the D40.
The Canon people: Id go with the Rebel XT. The XTi is way too expensive still. They both have inbody focusing and so are compatable with a wider range of lenses. The problem is that they tend to run a little bit more expensive.
For me, I had to feel both cameras. I went with the Nikon because it fit my hand better and I liked the user interface much better than the canon. Thats just me. Either way, you are looking at 400-500 Minimum for one of these babys. But unlike practically every other camera, dSLRs dont really lose value. I can still sell mine 6 months after i bought it and break even. Point and shoots lose value by the bucket load. Let me know if you have any other questions.
