Well...The SAFC is a fuel controller (piggyback as it may be) actually safc-tuning is kind of frowned upon in the N/A World because of timing retardation that occurs when you add / remove more fuel. In the FI world you want to retard your ignition more than in the NA world because of....detonation...
You can tune your car to get better gas mileage with the safc2 but really you do that for more power...and in the process you dont have to mash on the gas to get the same acceleration that you would without the tune.
Example....I have a 2000 Acura Integra GSR. I have changed the engine to the JDM, have the AEM V2 cold air racing intake, JDM 4-1 headers, aftermarket ECU, power pulley set, and a 8.8lb flywheel.
Stock it says that I get about 20ish mpg...(cant recall exactly off hand) but I DO get near-hybrid gas mileage. I get about 35-45 per gallon...when I drive "nicely", when I track it, I can get as little as 4-6 miles per gallon. (I like to shift at about 9k and keep it almost there the whole time 7-9k)
In other words... the mods you do to your car make it more efficient, and more powerful. Due to the efficiency increase you don't have to put your foot into it as much to get the same thing out (versus stock) and therefore your ecu sees the difference in throttle position, hence less gas used, but same performance, or more performance and more gas used...its a good fixed ratio.
