usually they only allow you to pull items like rims and stereo (basically simple item that will be replaced if the veh is totaled.) When a veh is totaled it goes to a total auction location, something like insuranceautoauction.com. These folks buy totaled vehs and auction them off just like normal cars.
Honestly if the veh does total, ask to purchase the vehicle back from the insurance. They will take a small difference out of the check they will cut you for a totaled veh and give you the title back but it will be retitled as a salvage title but you will still be able to keep the vehicle and will most likely have enough to cover your engine purchase plus a small amount over. The only thing that will stink is when you go to sell the vehicle you will be trying to sell a vehicle with a "salvaged title" which is sometimes a pain to try to sell but considering it is a Z you still should be able to move it later on.
Personally, I'd just take the money just make sure they don't screw you over for a few grand. The insurance can sometimes underpay on parts, not often, normally they overpay especially on the Z32. They don't have a lot of the resources we do.
For example, did an estimate on a Z32 recently with a dented fender and front bumper. Nissan's bumper was around $600 list and the fender was around $240 list as well, a new headlight was around $600 as well with associated bracketry/labor/paint and materials I wrote for it to be just over $2K.
On the street and utilizing the internet to get good prices, I can get all the parts for around $600-$700. I could probably get everything else painted for another $300-$400 and pretty much pocket the rest.
Get the idea. As long as the car is not being made payment on, then you are golden.
