I bought a used s15 helical diff for my s14, Installed my stock s14 ring gear with the original bolts, used the factory shims just as they were with the stock diff. Everything went well, and was tight, just as it should be. However when I drove the car there was a loud cliking. I pulled the pumpkin back out of the car. Upon closer inspection there was so much play between the pinion and the ring gear that you could turn the pinion slightly back and forth without continual gear meshing!!! I have bought different shims and tried eliminate the play without any luck!

sorry I did not finish my question! Could the problem be that I used the stock ring gear bolts and have the ring gear slightly off center? I have read that the Nismo bolts have a larger shank! I am thinking that at one end of the diff the ring gear pulls far enough away that it does not make proper contact! I know this sounds pretty sketchy, however I have read the other installs and I have done the swap just as everyone else and they had no problems.

No, it's impossible. Ring gear won't go all the way in, so you will have to tighten the bolts in cross pattern to push the ring gear all the way in. There's no way it'd seat off center. I've seen this problem on a couple of people's car. Just take your diff to a local racing shop and they will put right shims for you with some fee. I know most people use stock shims and I did too, but it's doesn't work perfectly 100% of the time.
