As for the front fenders, widebody fenders are going to be whole replacements. So you take the stock ones off, put the new ones on. Typically the fenders will be fiberglass. For fender flares, I believe you cut away the area that will be covered up, then mold the flares over, otherwise if you leave the metal underneath and run a wider, lower offset wheel, you're tires will be rubbing on that metal.

On this topic, you will not find a body shop that will cut into rear quarter panels, or shouldnt rather. I put a 10 piece widebody on my 2001 s2000. the front fenders were replaced completely, but the rear quarters are capped and molded. Cutting away from the rear quarters, or replacing them all together would seriously degrade the integrety of the frame, hensforth, I have never seen it done that way. I had the work done 2 1/2 years ago and have not had a single problem with the molding of the wide rear quarter caps!!!
