Actually using a temp gage to check back pressure is not the best. Because when the cat reaches light off temp you should actually see the temp increase after the cat by 100 degrease and it doesn’t provide an accurate depiction of what’s happing . The best way of testing back pressure is to get a back pressure gage it works by removing the 02 sensor closes to cat but not after it. Try to raise the rpm to about 2500rpm if the gage reads more then 5psi then you have to much back pressure. Don’t leave the o2 sensor out for very long because it will cause it to set a 02 sensor code.
