Hello,
I am trying to get a set of deep dish rims,
the rim size I am about to get is 19x9.5 and 19.10.5 et 22 and 25, I am worried if the rim is too big for my Z, since I know very little about offset numbers, I would be very appreciative for any response. Thank you.

Not terribad. Need a little work to make the fit if you wanna go low though. Check out http://www.rimtuck.com and search for similar fitments. You probably won't find the exact fitment on there, but you can get an idea. And most people post their mods in their profiles, so you can see what's needed as far as rolls and pulls and whatnot.

Also, your Z is very... Orange.

Another issue you should check out is backspacing for your brake calipers. Even if you aren't running OEM Brembos or an aftermarket big brake kit you may want to in the future and it would suck if what you wanted to go wouldn't get cleared by your wheels.

You can do a Google search for "wheel offset calculator" and use those to find out how your wheel fitment will change.
