if you want it to fit more properly you'll need something around +25offset more or less. um 18s with good tires for 800 or less means the tires cost more than the wheels?...
you might want to set your budget higher, maybe atleast 200 per 17". try 5zigen fn..... if you must... check classified if you're on a budget.

No, that's not to say those won't fit...but they will be tucked under the fender, and will SEVERLY limit your tire choices.
For $800, your not gonna find much better (unless you go used)...so if that's all you want to spend, what you've found will have to do.

As for tire sizes...205/40 is WAY too small.
205/55-16225/50-16215/45-17225/45-17
Don't go any smaller. Trust me.

youre going to have a real hard time finding good sized wheels for the price your trying for, up you budget to like $1200, $800 for wheels and $400 for tires, and youll have quite a few more options
