ok so if the radiator is fine, the thermostat is new, and the water pump appears to be fine.. what could cause the radiator to over flow into the resi. and make the engine over heat?

^^What he said.

New or not, you either have a cracked head, cracked block, or bad/wrong/damaged head gasket. Or the head or block sealing surfaces werent flat, so the new head gasket cant seal.

Why are the head and head gasket new? Why were they removed to begin with?

i had to change the head gasket because it was leaking water into cylender 4 and a little poof of white smoke would come out tail pipe everytime i started it.. now that i change gasket and the head.. no more poof.

but before i go my car appart for no reason, how would i go about testing the head gasket?

i think i agree with the big air bubble idea
