I have a 04 35 coupe with an intake and muffler delete, thinking about throwing on some test pipes for a while to see how I like it, What is going to be the difference in sound/performance from resonated vs non resonated test pipes?

Resonated means that it is "quieted" as in OEM stock, non-resonated means no quieting work done and noisier. Same for cats, and mufflers basically- the only difference there beyond the input/output diameters and can internal space. The performance of a testpipe will be similar either way.
So, you will sound far more "ricey" and with a touch more performance at WOT, and not much if possibly a little less performance at all other times with that raspy, nasty sound.

Resonated means it simply has a add-on resonator chamber to dampen the sound, but, it should not noticeably lower performance. It will be much louder. Hell, my Invidia system can be quite loud and both the HFC's and the catback have resonators.
