Replacing rear brake pads

I was wondering if I could get some DIY information on replacing the rear brake pads on my 2002 Maxima SE. There disc brakes like the front but the caliper does not retract like the front did. I have done some research on this and everything I have found is to turn the caliper clockwise till it retracts. I did this for like 30 full turns and does not seem to move any. I thought about loosing the valve to releave the pressure during the turning process but was afraid to get air in the system or contaminate the fluid.

Can I get some feedback please.

Yes, open the bleeder valve on any caliper every time you back out the piston. If you don't open the valve, you can cause damage to the piston. Also, whenever you do a pad job it's a good idea to bleed the brakes, to remove any air that could be in the line. Don't worry about contaminating the fluid, (it would be pretty hard to contaminate thru the bleeder valve) since you will be bleeding it out.
