If i had 2k to spend it would be going to new rods, pistons, and if possible, a crankshaft.

I have to agree with Dasoupdude. Your stock internals were not made to hold 500hp. They're bound to fail sooner than later.

Your profile lists a 300ZX but no 350Z or 370Z, does this need to be moved to Z32 Technical or do you need to add a car to your profile?

If you plan on doing the rings, the right thing to do is at minimum the main bearings. The block will have to be stripped anyway to bore or at least hone the cylinders. I assume you are replacing the rings due to wear and low compression? Just replacing the rings won't last as the bottom end will already have significant wear, and bringing the compression of to spec will just hasten the bottom end's demise....especially if it's higher HP than stock....and in that case there are a lot of improvements that can and should be made.

How about for a minimal stock setup, say 400hp? Will honing, ring replacement and main bearings suffice?
