So I bought a new dash to replace my cracked and faded one. However the new dash doesn't have the cutout for the passenger airbag. If I just disconnect/remove the passenger airbag, will my ECU throw a code? I realize the airbag is safe to have, but I really don't expect many passengers in this Z, if you catch my drift.

It will very likely throw an airbag light at you. The easy way to defeat this would be to take out the airbag lightbulb, especially if you plan on removing the drivers side airbag as well. (did that on my miata anyway.)

If you plan on keeping the driver's airbag, don't take the lightbulb out because you'll never know if there's an issue with the system, which could put you in a dangerous situation.

But the 'right' way around the airbag light for any car would be to find a resistor to wire into the airbag circuit that would fool the airbag error system into thinking there's an airbag there. The airbag system is different for every car, so you will need to have a potentiometer and test what OHM resistor you will need. If you need OHM's higher than the ones available to you, you can wire multiple resistors in parallel to achieve the appropriate effect.
