I miss the recipe of the day by -]sTm[-HeavyHips so I figured I would try to start my own recipe of the day. I just hope I can do half as good of a job as -]sTm[-HeavyHips.

Chicken Parmigiana

you will need:-4 boneless, skinless chicken breast halves-2 eggs, beaten-1 c. Italian style bread crumbs-1/4 c. olive oil-15 1/2oz. jar spaghetti sauce-1/2 c. grated parmesan cheese-1 c. shredded mozzarella cheese

directions:Preheat oven to 400f. Dip chicken into egg and then into bread crumbs, coating thoroughly. In a medium skillet, heat olive oil. Cook chicken in oil until done and well browned on both sides.pour spaghetti sauce into an 11 x 7-inch baking dish. Place chicken on sauce and top with parmesan and mozzarella cheeses. Bake for 15 min or until cheese is melted and lightly browned.

if you wanna make that chicken really good, you need to tenderize it first. of course, i prefer to fry my chicken in a broiler instead of pan frying

Hey the recipe of the day. Havent seen that in a while. I might have to try the chicken sometime sounds awfully good. :)
