Probably your HDMI converter then. I know some people make retarded analog HDMI to RCA converters that only work if you are sending an analog signal over the HDMI, which nothing does because HDMI is digital. I have used an active HDMI to RCA converter and it works great. Plugged in a chromecast this way to cast my phone or tablet screens onto the car display and it works fine with both video and audio. Also can plug an XBox 360 in to the main display and it works fine and has been for years.
Apple and iPhones are a whole nother animal though. Apple changes their spec too much and breaks compatibility which is a problem, and the converters can be entirely hit or miss depending on brand. It is possible to do it though, just might be a lot of trial and error and which hardware works will depend on your iPhone model.
If you plan to be using the RCA inputs pretty much all the time, you may want to invest in replacing the internal wiring from those jacks to the head unit with shielded cables. The RCA jacks pick up a LOT of electrical noise.
