I'm not sure what the exact ratios are, but you can expect your 5-speed to gear out at 161-163mph, assuming your final drive is stock. That's not rev limited or speed governed. At 3000 RPM in 5th gear, S-chassis cars are usually going 70mph, plus or minus one. Given that:
In 5th gear,
3000 RPM / 70mph = 6900 RPM / X,
your speed at redline in 5th will be about 161.
Stock transmission, stock final drive gear. Hope this helps.
EDIT: You can probably push it just a little harder, and if you can get an engine that revs higher, you're golden. Mate a KA transmission to a tuned CA, which has been known to rev up to 8000, and your top speed suddenly equals 186mph. Heh heh... good luck getting there, though.
