5w and 10w mean how resistant to temp swings it is. really makes no difference for most people. the 2nd number (30) is the actual weight of the oil. thats what matters.
Since I'm in NJ in winter i would use something like 20W but in summer I would run with Synthetic oil, right?
I remember reading somewhere it said that 20W is better for colder weathers since its thin, it gets to the valvetrain better and causes less trouble starting in cold weather... is that true?

But it also said that a multiviscosity oil like 10W-30 would provide best of both. SO which would be better to run a multiviscosity 10W-30 or switching it up as the weather changes??
