does anyone know if drilling into 07 sentra pedals will do any damage to any sensors. i am just curious because i would like to add pedal covers. that have better grip for when i go home and get to drive in the mountains

Take a look at them. They shouldn't. The pedals are simply wired to the sensors. The mounting points for covers are generally on the edges, away from any wires.
