In Buffalo we always use Blue Cheese. I didn't know people ate ranch with wings until I was 28.

The problem with this question is that midwestern markets offer about two dozen versions of ranch. Some of those ranch varieties are superb.

For salads, ranch blends better. For wings, blue cheese offers better contrast.

I guess if we're comparing standard ranch to blue cheese, blue cheese wins.

If you want to make authentic Buffalo style Blue Cheese Dressing.

1 cup Mayonnaise
1 cup Sour Cream,
1 cup Blue Cheese Crumbles

Clearly, you hadn't visited the south.

I can go either way depending on my mood. Most of the time I just enjoy the buffalo sauce.
If you see me dipping, its because the sauce is either too hot, or I'm on my 10th wing and it doesn't matter anymore.

I do agree that there are varying qualities of both. Ranch can be too oily (like Hidden Valley) or too blue cheese too salty (like most private label). Marzettis is the knock out win for both. Kens if I'm not feeling wealthy.

Overall, I eat my wings as-is but will probably use blue cheese first but only by a slim margin.

Blue cheese compliments the peppers well. Ranch is good, but has too much of it's own flavor. It becomes too complicated. Ranch is amazing for fried chicken, but has no place with Buffalo wings.

I'm not overly fond of ranch in general. It's extremely generic. It works with just about everything, but there's something better for just about everything, too. For salads I prefer Caesar or something acidic (depending on the salad). For buffalo, I most certainly prefer blue cheese for its complimentary sharpness and texture.

The purpose of ranch with buffalo is to eliminate the heat because you're a pansy.
The purpose of blue cheese with buffalo is to compliment the flavor because it's delicious.

Blue Cheese only. I used to love ranch, and then when I was about 12, I had blue cheese for the first time. I've never looked back. I haven't found anything it doesn't make taste better (within reason of course).

It depends on the kind of wings. Anything hot needs blue cheese or at least sour cream (another entry I think deserves mention). But I prefer good creamy ranch on naked wings.

Some people even like yogurt sauce on theirs...

I'd love to see it here in the Bay Area ... anyone want to organize one and bell that cat?

Yeah, I'd attend it, but taking the time to organize one would be tough for me ... work pressure is hectic.

To paraphrase Charles Ives, if you don't like blue cheese, you have sissy palates.
