2011 Altima 2 5 SL had a radiator leak. Do I really need to remove the front bumper in order to replace the radiator?

Yep. Soak the seam between the fender and the bumper cover with dry silicone spray before you take it loose, there will be a lot less chance of damaging the pawls and having problems with reassembly.

Saw a YouTube video in which the guys just removes the grill to replace the radiator? What are your thoughts? I want to tackle this radiator replacement myself!

You can do it that way, but the lower grille pawls are a real PITA to get at and are usually brittle on an older ride. The bumper skirt really isn't all that daunting to remove as long as you're careful to lubricate those fender seams, and you'll be much less likely to break anything with it out of the way..
