Does anyone have any experience on performing a radiator fan assembly swap out? The Infiniti part is around $500 whereas an aftermarket is about $200, which one would you buy? How difficult is the job?

It can be easy peazy or it can be a can of worms. Usually somewhere in between. The convenience of OEM working and fitting is often worth the $$ compared to aftermarket. Now, I was visualizing those universal fans, but I shopped and see you can get OEM style fans for less than Nissan branded parts. Those seem okay. The radiator is vital to keeping your car from overheating and I see this is a newer luxury SUV. I recommend getting a New OEM fan and have it installed.

Just for some additional info with anyone in the same boat. I went the cheaper 'oem style' replacement first. Now 15 months later I am back to needing a new radiator fan, so more expensive OEM fan here I come.

I recommend getting the OEM one as well. Better to do it right once (even if costs more) than doing the job twice. As far as how to do it or how difficult it is, that may be information you can find in the factory service manual.
