Yeah 30mm is a bit much, but with a +18 offset starting point it won't be too bad on the bearing. Just make sure you trust your torque wrench.
Hub centric vs. stud centric has to do with where the weight balancing occurs on the wheel. As the idea of spacers is to become a "part of your wheel," you should match weight distribution properly.
PBM spacers are hub centric, and there's a 99% chance your wheels are hub centric.
No need for extended studs at all, just check out that link and how they look on my car. The original studs are used to fix the spacer to the hub, and then you have studs built into the spacer. Great design, pretty common among reputable manufacturers.
