Painting the car plus engine bay but who does the work?

I want to paint my car. Everything. Now I was told that if I were to do the prep work I can save alot of money. That I am willing to do but painting I will leave to the professionals. Well I am to new to cars. I can't take out everything from the engine bay and put it back together.

Do, painting shops when asked to paint engine bays, pull the stuff out themselves and place it together again? If they don't do I have to do it myself?
