Car: 08 black altima coupe 3.5 SE fully loaded, every option, except factory spoiler.

I know it really wouldn't make sense with a cvt trans but technically since we have the "manual" mode could you just wire it up with a 350/370 steering wheel? I'm putting a cut out on my car since i eant louds but not all the time for a daily driver and just want it for the occasional pulls.

The difference you are referring to is the manual/paddle shifter available on some 2008-2009 SL models. All this does is select a fixed gear ratio through software... to mimic a 'Tiptronic' or manually shifted automatic transmission. This does not affect the reliability, if anything the manual shifted models are desirable as they also include a transmission oil cooler which can be beneficial if you drive in a hot climate or tow a trailer.
