i'm not sure how intelligent this idea is, but on an S14, to install an oil pressure gauge, does it have to be installed at the the Stock Oil Sender thing. Would it be possible to tap the oil pan, or would it not return a correct reading...

AFAIK the reason for the location of the oil pressure sender is to read oil pump output pressure. IF you tap the oil pan...it probably won't read anything...

What if you have a relocaton kit? Could you tap into the remote filter location?

Should be fine since it's just downstream of the pump output. It might read a bit lower than stock loc from friction losses, but that's part of what you want to know.

I have mine connected to the filter plate of my oil filter relocation kit, the part the filter actually screws onto. I figure if the pressure is right there, it has to be higher closer to the motor, so if thats good, pressure in the motor should be too.

Why would it be higher closer to the engine? The oil pump is what creates the pressure and its outlet will have the highest pressure of the entire system. The oil flows from there to all the various galleries, tensioner, bearings, lifters, etc, losing pressure along the way due to frictional losses, until finally exiting whatever it is being lubed.
