Oil pan gasket

How hard is it to change a bad oil pan gasket? The dealership will do it for about $250. Is it necessary to unbolt the motor mounts and all that or is there enough room to just remove the pan and add a gasket and sealant?

What kind of car do you have? The level of difficulty varies tremendously depending on the car.

On a 240SX, yes, you do have to unbolt all the motor mounts (well, all two). You can either do that, or drop the suspension. But the key is, there is not enough room to simply unbolt it. $250 sounds about right for the dealer to do it.
