I've been looking at this S15 for awhile now and think the wheels are perfect(size, offset, tire) I know they're gramlight 57s but I was wondering if any of you guys could maybe guestimate what all the dimensions are?

well, its kinda hard to tell. I do know that out of the s13, s14, and s15, s15's usually run higher offsets than the s13 and s14. And I mean high... like +30's and +40's... and 8/9" width staggers are more common than 9/10" width staggers because there's not much room to play with on stock fenders.

If I were to take a guess, I'd say it would be around like 18x9 18x10 (+15 to +25) all around or something... only because it looks like the tires have a stretch and theres a lot of camber.

btw, if you want those wheels on your s13 (judging by your profile) in hopes of achieving the same wheel stance, you're not going to want the same exact specs (at least offset wise) of that s15 pictured.
