Odd cooling issue-2003 M45

On and off, with no regularity, my temp gauge will rise to nearly the top of the "normal" range, then I will hear the engine fan, then the gauge immediately dips back to the middle of the "normal" range. Any ideas as to what could be causing such an unusual problem?

first Change your Coolant water.

If still exist... Check your thermostat!

Check the coolant level, thermostat and check if you have any air bubbles in your coolant line too.

Check for any leaks specially underneath the Intake manifold.

Changed the thermostat, temp gauge stays exactly where it is supposed to , now to see if the coolant on the intake manifold issue goes away with it.

Check the coolant fan oil! It is something completely different from the "regular coolant".
A body shop removed the radiator, but was not aware of the uniqueness of our cars. I was pretty much overheating, and it was only after they consulted with an Infiniti dealership did they know what was wrong.
I'm unaware how to check it or add it though!

The cooling fan fluid is power steering fluid. Use a synthetic ATF for better cold-weather performance and reduced operating temperatures. Its fluid reservoir looks like a power steering fluid reservoir found on other Nissan vehicles (see MA-19), so use a turkey baster to siphon the fluid from the reservoir.
