Upgrading my brake lines to Goodridge Stainless Steel lines.

Can I use Nissan GT-R R35 Special DOT-4 Brake Fluid in my 90 300zx NA?

There's nothing "special" about the fluid in a GTR's brake system.

If you switch from DOT3 to DOT4, make sure to flush the system thoroughly. It's a bit of a waste of fluid unless you're doing some serious track time (and need to increase the boiling point).

Just use a good quality fluid (I like ATE Super Blue).

Only difference between the two is slightly higher boiling point. Make sure you stay away from DOT 5 though, it is very incompatible with the others.
