Hmmm ... it is a bit bothersome that some car model has the issue (and needs a recall), but another close car model doesn't?

For example, some models from Infiniti are on the list:

2001 – 2004 Infiniti I30/I35
2002 – 2003 Infiniti QX4
2003 – 2005 Infiniti FX35/FX45

But, this does not include the 2003.5/2004 G35, 2003/2004 M45, from around the same time (from a model year perspective anyway).

Is it likely/possible that Nissan/Infiniti would have used these Takata airbags in some cars from that time, but not others?

For example, the G35 from that era probably had the same steering wheel as the FX35, I would have thought ... meaning the same airbag supplier.

What am I missing? Frankly, I'd like to avoid having shards of metal in my face and neck in a low-speed collision that I would have survived otherwise!

You're not missing anything. I'm sure Nissan/Infiniti has more than one air bag supplier. It makes sense to have multiple suppliers as many manufacturers operate JIT systems (as in "just in time") which means they operate assembly plants with small parts inventories to keep costs down. having a second supplier also means less chance of a shut down for a missing part. I'm also confident they can also track whose parts were initially installed in which vehicle. So unless you get a recall notice, I'm not sure wearing a medieval suit of armor or Kevlar burka for driving is necessary just yet.

The recalled parts (on the Infiniti models anyway) are the passenger side airbag inflators, so don't worry about the steering wheel thing. Also, I was amused to find out that these recalls everyone's just now going ape s*** about are the same ones we've been doing for a couple of months now, way before the media s***storm happened.

As the logistics provider that shipped 90% of these airbags let me tell you. There are multiple airbag providers at every manufacturer and there are multiple airbag designs/models at every airbag manufacturer.

I'm so glad the Deville was removed from the list otherwise I'd have two rolling grenades to take in for service.

I'd be nowhere without my looks.

You'd be surprised. They can get semi close to knowing what lot of parts go to what vehicle, but even then it's a little shaky, so they often have to recall more than they should. There's not many components that are bar scanned in that match a specific serial number to the vehicle.
Also, many times there IS only one supplier for a part. It makes tracking and supplier improvement easier. Just because there is a parts shortage doesn't mean it'll shut the line down. They'll drive those things off the line missing all sorts of stuff, then just go put back on later, hopefully without breaking anything else, and securing it to the correct torque, etc.
