New problems??? or are they?

well two new things are happening - when i cold star the car the engine goes to where it should, but then it drops to around 500 rpm and then goes back to normal again. It only happens once, and after it happens, everything seems good. What would cause this? Also, when driving in the rain, for some reason my speedo will go all wonky - drop down to 0, quickly rise back up to speed, then drop down again. These arent big issues, but they're...weird

I also had the cold start problem with my old 240. I find it as nothing big and should probably be ignored unless the problem persists into something bad. As for your speedo, you may want to check your speedo sensor underneath the car, take it out clean it ect... Search for where to find it as I am not exactly sure where to find it.

today it was pretty bad - dropped down to 300-400, felt like it was going to stall, but it (very) slowly crept back up - could it be the maf?

You may want to search the for info on "IACV" If it get bad enough the car could start stalling when you come to a stop sign or other situation where the car should return to idle speed, but fails to after a deceleration under low load. Checking in the Nissan Online Mechanic section would be worth the effort.
