First off.. Welcome to NICO!!! Congrats on the 'vert. We're really glad to have you here.
Some answers for you... 1.) No. Coupe door panels are too thin to the door to work with all the extra 'vert bracing and the seat belt pillar. They just won't fit. ]
2.) Tough find.. keep your eyes open for people parting out cars, or check with junkyards, etc.. Or, better yet... make your own. Get creative... get some kind of metal screen and shape it and cover it.
3.) You should really consider just doing a coupe door swap. The doors are interchangable between the coupe and the vert... doing this will get rid of the door pillar, and with a small wiring modification to the original door wiring harness, you can add the power mirrors that you will get with the coupe door. If you don't want to convert the entire door, you will have to cut and modify the door panels for the power mirror controls, then swap the mirrors themselves, then modify all the wiring.

5.) I've heard that marine plastic works really well. Try going to a boat and boating supply store.
