Just wanted to introduce myself. I took a step off the slippery slope yesterday when I purchased my first 240...a 1992 Nissan 240SX SE. The car has 165K miles and has not been modified at all. It does have a blown head gasket. It has been sitting for about 1.5 years. I look forward to turning making this car into a great street machine. My first project after getting it back onto the street will be a 5 speed conversion. So Hello! to everyone! I look forward to filling my head with info.

welcome to nico, it is the grimoir of s chassis autos. and filled with wonderful people who will give you a high-five and flame you at the same time....no i kid, its a great place, read up on the tech pages, past posts, theres most likely infor or a how-to on just about everything youll want to do to it.
the head gasket as well as the manual conversion and parts lists are here as well.

Welcome, but just consider its not a bad time to do a motor swap, it would cover most of your 5 speed conversion too...

doesnt look awful for 165k ha. you'll probably want to get that spoiler off soon too, its just gonna attract rust

I just don't have the money to do the motor swap right now. I am going to get her running and go from there. Is there an article on here as to how to remove the spoiler?

its relatively simple, but kind of a PITA for the outside mounts. If you open the hatch, there should be a piece of carpet attached to the inside. pop off the plastic pieces all the way around. IIRC, there are 2 nuts to take off, then the plastic things. to get those off, you have to pry with a flathead screwdriver and they will come out on the "in" side of the hatch. As for filling the holes, i spent less than $10 on some stuff that worked pretty well (check the second page of the link in my sig). Good Luck!

What do I need to do after I take the head off the car? I am assuming I need to take it to a machine shop to get things checked out?... Also, what needs to be replaced, other than all gaskets and the head studs?

You will want to take it to the machine shop to have it resurfaced.

Will they tear the head down or will I need to do that?
