Sounds like one of the common problems 240s have. Car dies when it comes off the revs. It used to happen to me, was worse when I was had the lights on or was braking. Watch what happens if you just clutch it in gear and let off the gas, the tach will probably go down really low, (like 200-300 rpm or around there, or maybe die.) There are a bunch of thing that could cause this. IAA or IACV valve, MAFS, EGR, vacuum leak, grounding issues, etc... you have to start eliminating stuff, check your ECU to see if it throws any codes. If you havn't removed or cleaned the AIV on your car, this also might help. Also, on a strange note, this problem dissapeared on my car after I installed a kill switch in the ignition circuit...
As a temp solution you can bump up your idle to keep the rpms from dropping too low or turn your AC on (maybe not such a good idea this time of year), it has a control to keep the rpm up when the compressor is on.
