I tried to do the same thing. I was told I'd have to buy a new center instrument console from Japan or somewhere. So I gave up. Buy a mountable one.

It can be done, but expect a whole lotta work. The wiring harness between a NAV equipped G35 and one without is very different. The cost will probably make trading for a model with NAV already in it more attractive. The work involved is extensive as well. Just to get the stereo unit out it requires most of the lower dash to be disassembled. There are some good headunits out there with NAV built in that might be a cheaper option. You'll want to check connectivity if you want to retain the steering wheel controls, but some units have accomodations for it while you can adapt others with some components.
