either rb25, or sr20 gettin swapped into a s14...any writeups or anything?

yeah, you will want to look around for those. congratulations on switching from mugen to nismo. its a step in the right direction.

yea... so on a scale of dificulty how much harder is a sr20det swap into an s14 than a honda motor swap?

I'd rate it like a H22 into a EG in terms of wiring, and a B-Series in terms of fitment.

bolts right in. just swap some parts and wire away. i could think of much more difficult wiring projects.
