I agree that some of those features would be nice, but it looks like the EX wasn't designed to be a family oriented vehicle. To me it looks like it was intended for an audience who do not have children in their household. It's funny though because my wife and I have young children and we own an EX

For the power socket, you can buy an extension and run it to the back seat. I actually have a 12V DC splitter with long power cord that would reach the back, but I haven't used it yet in the EX. I know that this solution is somewhat inconvenient and looks cheesy, but it should work fine if you only use it on long trips. The other alternative is to install one in the back. Any automotive stereo shop should be able to do it; but I don't know if its worth the $$.
Now if you'd like those little extra "rear passenger" features standard, you would probably have little trouble finding them in a mid or full size suv/crossover, or in a minivan. They're more likely to be used as people haulers (especially on longer trips) and have additional features to accommodate more than just the people in the front seat.
Hey, at least the EX has climate control vents for those in the back seat
