A lof of the bigger chain places have liability issues if you try to get them to install parts that they don't supply. Say those headers crack after a few thousand miles, Midas could get sued for installing them incorrecly even though it may have been a bad set of headers. I tired to get a Spitfire and Jiffylube to change my gear oil my supplied syncromech, they wouldn't do it due to liability.
Technically (in a lot of states: IL) it is illegal to install a muffler system that is louder than what is existing...but what is to say that an old system with a rust hole in it isn't louder than your catback? Go to a smaller shop, your paying for mostly labor and there my be no warrantee. Most shops are kewl about their work, so say you break a hanger, they will weld it back on for you.
