People have used the coolant bleeding hole on the intake manifold itself for the water temp gage. The threads need to be taped out to the right size, and then the fitting just screws in there.

I have an Autometer Sport Comp gauge.I have it run into the upper radiator hose. You can either buy a fancy inline adaptor or go to a salvage yard and pull one out of the lower radiator hose.If you look at the lower hose you will see the adaptor. It runs a switch for the small fan behind the bumper. Grab that, remove the switch, insert gauge probe with some teflon tape. Much easier than drilling and tapping your manifold.
