Finally got the car on the road with the new swap after many headaches last night. It drove fine last night, and today I took it for a good long (about 45 minute) ride and swung by my shop to grab my backseat. I return to the car, start it up and when I go to leave the driveway, I hear it, a LOUD tapping right around 2500rpm. I'm sure its either a valve or a lifter, it doesn't sound like bottom end.

I really don't want to have to jerk the motor out again, but how hard is it to yank the head off with the motor in the car? If I do yank the head, what should I have done to it? Any recommendation on valves/springs/retainers/ etc?

Haydraulic lash adjustors can easily be replaced with the engine in the car. They are the cause of tapping noises, whether its your tapping or not is hard to say.

Are you absolutely sure its not some exhaust rattle resonating around 2500 RPM's?

I'm 100% sure its not exhaust related, you can pop the hood and pull the throttle and hear it. Sounds about at 2nd cyliner.

How can I tell if it's the hydraulic lash adjustor or if its a valve? And where can I get the lash adjustors?

Your lash adjusters probably dont need to be replaced, you probably just need to bleed them and get all the air out.

How do I bleed them? I'm going to try running some ATF through the engine for an hour then seeing if they improve or not. It doesn't seem to be all the valves, just one I think, but its pretty loud, like a klacking noise.

They have never been removed, and the car ran fine for about 2 days, is it possible they somehow got air in them during that time?

You take thm out and either squirt oil through them or dunk them in oil and shove a thin objrct down the hole till it stops moving. once you install them you could run the engine then take the cams off and push down on the rocker arms. If the rocker goes down, you bled them wrong. You can get them from Heavy Throttle, probably everywhere else too.

I found a unravled paperclip works just fine to depress the spring inside. Pretty easy as long as you have the tools to take it apart and put it back together.

Ouch dude, that sucks. Did you check for oil flow one the top end before running it?
