Machine shop

so I am taking my block to the machine shop for a deck and various other things. My question is with the decking process, see i don't know how to take off the coolant and what i believe is oil steel tubes that come from/to the head and i believe is necessary to remove before the decking is to take place. if anyone knows what im talking about and how to remove and reinstall these tubes or if the machine shop will do it for me let me know please
