something like this can be better explained if you do a search
basically from what I remember from MY search, the power steering system is hard to flush so you actually want to use a pump to pump out old fluid from the resevior, drive for a few day, pump some more... repeat a few times. Personalyl I went with vasoline's ATF to do the job since it's synthetic and it's red (you can see the progressional change every time when you pump it)
as for the brake fluid, it's probbaly a 2 person job, that's the only way I know how. Basically need to have a thin hose between a bottle of brake fluid and the brake fluid resevior. Set the bottle to be much higher so it'll siphon to the resevior.
1 person pump and build up pressure in the brake system, stop, other person release pressure from the brake calipers, stop, repeat
the sequence of calipers are from farest to the closest to the resevior
I am going pretty vague, but this subject has been covered a few times in the past and a search will yield better info or even visual than what I can offer
