I have a 91 300zx 2+2 with a twin turbo conversion here is a list of the mods.
Intake
Cat back exhaust
JDM down pipes
Gutted cats
Z1 chip
Under drive pulley
Upgraded clutch
1 piece drive shaft
Avcr boost controller (set on 9psi for daily and spikes at 15psi)
Greddy turbo timer

The car idles great when you start it. Then you go for a drive and when you really get on the boost and get the rpms up high then press the clutch in and put it in neutral the rpms go really low (around 500) and the car shuts off sometimes when this happens. Then you put it in gear and it role starts. Took it to the shop to check for vacuum leaks and got them to turn the idle up a little but that hasn't helped. Any ideas?

Do you have the stock intake filters or an aftermarket cone filter?

If you have the cone filter, check out the "flower pot mod". It is supposed to solve problems like the one you are having. Just google it and it will give you a description of why it cause it the Idle to drop.

Another is check for codes. Makes sure TPS is set correctly and make sure the Throttle Bodies are clean. MAF could use a good cleaning, never hurts.

Yes, I guess that is when it effects it the most. I have never had this issue and I have a cone filter as well, so I cannot tell you if it will solve your problem. Its a cheap mod that has helped many people with the same issue. It could be possible the tune you have from Z1 doesn't have single POP intake. That could also be an issue.

Keep us posted what you did and if you fixed it. Too many post that people do and do not let people know if it got fixed or not. Someone else down the road may have the same issue, you could be the one that helped.

I know this maybe late, but sounds like you might have a clogged fuel filter. $10 part....
