Got a new knock sensor and upgraded harness on the way from Z1, and I'm curious to where anyone who has relocated theirs, has had the best luck.

Nice!
tt.net and RoboZ both have good knock relocate how-to's, and there really aren't too many choices which will allow the sensor to work and be do-able DIY. A job best done when the intake manifold is off for serious work like injectors and valve cover gaskets, seal replacements, etc.

Ohk awesome!! I've looked at those already. I'm teasing the idea of the one on the driver bank and on the back of the head. Or the top back of the intake plenum, just curious which would be more effective, till I have everything I need to pull the plenum and replace all the injectors and fuel lines.

I think I've heard the back of head idea before, and seems good although maybe a bit tough to access? Like the IACV...

Try moving the knock sensor to a different location. Make sure the sensor is also on a clean smooth surface that will ground it as well. The back of the head is defiantly a better choice for location.

When I test the sensor and harness, what kind of reading should I get if all checks out

I'd just be concerned with continuity if the harness and connectors check out- not scorched or corroded, or both. Often the scorching means that it's brittle and can be broken inside, replacing with the upgraded harness is both a repair and piece of mind with the upgraded heat and moisture protection.
