Probably an exhaust leak.
They can make some weird noises.

If your cat is rattling its most likely gone bad, if you've ever looked into a cat its a huge mesh of all kinds of precious metals. Well the cat operates extremely hot and after a while the metals break down and they will rattle around in your cat and could end up clogging your cat and if your cat is clogged then your car will not be able to flow exhaust and it will not be able to run properly.

Hit the cat with a mallet if it rattles then there you go.
If you want to test the maf then just let the car idle at operating temperature then unplug the maf. If your idle changes then its good, if not then it could be your maf or both.

check what's been suggested already. i just wanted to point out that a bad head gasket doesn't necessarily mean that you will be leaking coolant out of the joint between the head and block.
