Just finished putting car back together, awkward problem

I couldn't find anything related to this in searches, so I'll make a new post.

my car has been down for a few weeks as i did the 300zx front brakes (stock mc/booster until my new one comes in, stock rears) and exhaust.

when i tried to drive it yesterday, i kept getting an awkward problem every time i put it into drive and started to move. you could feel/hear the car trying to break free of the grip of something (which i would assume is the brakes) and a very odd gripping/grinding noise occurs a couple of times as i take off, but disappears once i'm moving at a decent speed. the brake theory has an issue, I never have the problem in reverse as far as i can test, and I'm pretty sure i dont have stuck calipers as im able to pump the brakes, and then go to each tire and turn it myself while it's jacked up (although the rears seem a bit harder to move than the fronts) and I feel pretty stuck, so if anyone has any suggestions, shoot em at me. My original brake setup worked fine before i started my work.

this has been quite a journey for me, but on the bright side, my rears now have new pads and are wearing evenly again.

For those who stumble upon this thread, I'm almost certain the problem was that i never checked my brake booster rod specs before reinstalling it, and that led me to having it constantly engaging the MC/brakes a little while driving. Hopefully this thread will someday help someone before they go on an "adventure" of their own.
