JUMPY THROTTLE PROBLEMS

So I am having some issues with my throttle. Coming out of 1st gear and 2nd gear it seems like my throttle is jumpy/a tad unresponsive...

My turbo had been eating up my spark plug cables so I jimmy-rigged a heat shield and thats helped a lot, but my throttle is still a little jumpy. All the cables are brand new.

Any ideas?

are you getting cross arc from the coil from plug wire to plug wire?..are the wires seperate or touching in some area's?

The plug wires are custom run along the side of my engine so they are all touching eachother... but does that really make any difference? I mean, the wires aren't exposed or anything.
