Recently decided to revive this 2011 Infiniti G37x. 250,000 miles good/fair condition.

Noticed there was absolutely no circulation in the coolant after it ran hot badly one day and I had to pull over let it cool then limp 2 miles to work. After work I drove it home no problem. Temp slightly above normal though, also noticed fans weren't kicking on.

1. Installed new radiator, thermostat, changed the oil. No cross contamination of fluids was seen throughout this process.
2. Upon beginning the coolant air bleeding process I go to start the car. (All proper bleed kit etc. in place and ready).

*** The car will not stay running at all, not even with a little assist from the throttle. Has a very rough Idle and is throwing P2019 codes (fuel pressure at the rail).
*** The car ran in the driveway before I started the repairs to the coolant system for about 30 minutes while I was attempting to perform a coolant flush when it ran hot again which prompted me to order parts and perform the repairs mentioned in 1.

I'm in dire need of a second opinion on this. My instincts and recent research lead me to believe it's the gallery gaskets and water pump, or that it was run too hot the day it failed (250,000 miles) and something like a water to jacket has happened inside that I can't see in the fluids yet because they are new and the car hasn't ran long enough to cross contaminate. Any thoughts on what tests to run to help narrow this diagnosis down would be GREATLY APPRECIATED. PLEASE AND THANK YOU

Great questions. My first thought, as yours, would be a head gasket or other catastrophic failure (which wouldn't necessarily cause water / oil mix).

I think my first order of business (rather than throwing parts at it) would be a compression test of all 6 cylinders.

Your fan problem is very likely a blown controller. Your G (and most other Infinitis from that period) has DC fans which work at variable speed by way of a separate controller which uses FET transistors and a PWM speed signal. The FET's are the weak link in the system and prone to failure in old age. There's also a fan relay in the circuit, and of course the fans themselves could be shot.
