is it ok to drive without window/lock controls

Hey I'm in the process of replacing speakers so Ive got my window/lock consoles removed from my door. However, I need to run to the store real quick... so would it be ok to drive without setting off the security system or airbags

You'll be fine.

Just lock and unlock from the outside.

Yep, I drove without front door panels (and mistakenly forgot to unlock the windows, so even the back windows were locked) for a day or two and just used the key fob to lock/unlock doors.
